Got so inspired from eggheads cheese post so had to try this out.

Bought a Norvegia cheese which is a kind of gouda cheese. Cut it in 4 pieces and fired up the smokerbox in my weber.

Figured we have the right temperature to do cold smoke now so gave it a shot.

Thinking 3-4 hours of smoking and the wrap in plastic for a week.

Never done this before.

I smoke with oak from used oak barrels that have been filled with aquavit. That should give the cheese some aroma I hope.

you can try one week if the cheese does not taste the way you think it should give it a second week and try it again, make notes of your taste experience, use the wife and kids to give you their opinoins as well, I have let some of mine mellow longer like the three week area, the guys at work sure seem to like it.

I think a week should be okay but I normally tell folks 2 weeks if I give some away early.

The aquavit barrel wood sounds interesting.

Macallans single malt Scotch is put in oak barrels that have been used for port wine. It would be interesting to try some of it out. I’ve tried the Jack Daniels chips - not impressed.

I let them rest for 10 days. Going on winter holiday next week so I am not able to try them before I'm back.

That's good I think. I am not so patient so would probably have eaten half of it before 10 days :laughing7:
