Tex-Mex Breakfast Flat Taco

Tex-Mex Breakfast Flat Taco
Y'alls indulgence please - - - I was just blessed with a great Camera and now I'm trying to learning how to justify the gift. Hopefully I will learn and do myself proud but sometimes my eyes and hands have a mind of their own.
These are pics in structural order of my very favorite breakfast that I probably fix and eat 75% of the time. So far I have not gotten burnt out or tired of this creation. It's basically a layered flat Taco with 2 corn torts, a mix of homemade salsa and jalapeno jelly, 2 layers of shredded pepper jack cheese, salt, pepper, Suckle Busters Jalapeno Texas Gunpowder, scrambled egg and an Owens Hot Sausage Pattie finely chopped into the scrambled eggs. After it's built, I nuked it to melt the cheese and flavors together.
Excuse the Sillyness but I'm finally learning ?I think?

Yeah buddy, that sounds and looks delicious !! I may have to try this. I can get a close version of these ingredients up here in Snowville .

You bet, I'll betcha that some of that flat bread Y'all use, some Itally mater sauce and some mozzarella will sub just fine

..but.. i've gotten lazy
i put my beaten eggs, pico & cheese in the bowl
scramble in butter
& nuke my corn tortillas
i'm counting how many seconds it takes to put it together
i keep trying to get breakfast prep to under 5'mins
since i grind my beans
boil my filtered water in a tea kettle
and pour through a traditional #4 Melita filter
into a thermos
the coffee takes the most time
..but.. i've gotten lazy

Thanks Y'all, I'm all giggly over that Olympus Camera - - makes me want to go ahead and do those Burnt Ends that I haven't done yet.
That sounds like a good Breakfast, Capt'n. The longest part of mine is frying the pattie so it's probably a 10 min cook

Not "before" but I have afterwards, however, a good dawg bun works best "for me".
