Crawfish boil Corn Chowder

Corn Chowder (from crawfish boil)
Went to an all you can eat crawfish event yesterday evening. I love the corn and potatoes, sausage, onions, garlic, etc that come with the crawfish. I completely understand a business loading you up with corn, potatoes, etc at an all you can eat crawfish event but when I go, I put the “filler” stuff aside and eat crawfish. I like making frittatas with the left overs but decided to go chowder this time. Remember that the corn and potatoes are cooked and seasoned so you may want to hold off on a bunch of seasoning until you taste.
5 half ears of corn
1 pound of potatoes (approximate)
1/2 of a medium onion chopped
1 tablespoon of chopped garlic
4 cups vegetable broth
1 cup heavy cream
2 tablespoons butter
2 tablespoons of flour
Your favorite garnish
Remove the corn from the cobs, peal and cube the potatoes. Melt the butter and sauté the onions and garlic. Add the flour once the onions are softened and stir well to coat evenly. Add the vegetable stock and bring to a boil. Add the potatoes and heavy cream and simmer a few minutes while mashing some of the the potatoes. Finally - add the corn. A few tails wouldn’t hurt but who has leftover tails.
I garnished with some radish, chives, avocado, and added a little black pepper.
