Twisted Chicken Cordon Bleu

So I've been moving a package of Chicken Breasts out of my way too many times this week. Well, today I had enough and I'm not a fan of freezing any type of meats, just how I am. So I looked in the fridge to see what else may be on thier way out in the near future and decided on some sort of Chicken Cordon Bleu.
Didn't want to break out the deep fryer like the normal way because were trying to stay away from the Fried Greasy foods so out came the Big Easy for these.
I'm not a fan of Chicken Breasts to begin with because they tend to dry out so I outsmarted the bird and went with the Oil Less Turkey Fryer.
Pounded the breasts into oblivion with a mallet first, then seasoned em up real good, layered Swiss and Ham from the bone. Rolled em up, toothpicked them to keep them somewhat closed and into the Big Easy without the Crisper Lid for 15 minutes. Another 10 minutes with the Crisper Lid on and we were golden.
Made some simple Sauce but added a few things to kick it up a bit other than just the Cream Of Chicken Soup and Heavy Cream.
Took some Chicken Breast pieces that I trimmed up and diced them up very small.
Sauteed over some Coconut Oil and put aside. Heated up the sauce base and added in the Diced Chicken Pieces, Shredded Deli Ham and Shredded Swiss Cheese.
Added Italian Seasonings Blend, Salt & Pepper and a little Milk.
Left on simmer for 20 minutes constantly stirring.
Trimmed and split some Brussel Sprouts,Oil, Pink Himalayan Sea Salt, Mixed Black Peppercorns, Garlic Powder and Grated Parmesan Cheese and into the Big Easy for 25 minutes.

In the end, we enjoyed a nice sit down dinner after a busy busy weekend.
Chicken was juicy as I expected and had all of the Chicken Cordon Bleu taste with a few less calories.

Now, in a bit were headed to a well known Ice Cream joint with the little guy , he's excited as can be
