Buddy called and said they were making a run to Scott La and asked if I wanted anything from Billy’s (my personal favorite). Of course the answer was yes. But this reminded me I had some boudin from Hebert’s (definitely not my favorite) in the freezer. My first thought was boudin smash burgers on the griddle. When I cut it open though it was basically mush that would’ve crumbled during the cook. So I made some balls and froze them for dinner. My mistake was freezing them. Basically I cooked them frozen which means I got them way too dark to make sure they were done but they tasted ok. Tossed In some catfish fillets and oven roasted some okra for what turned out to be a pretty good little dinner.

I come through there all the time Sooner, I never can seem to deal with the line at Billy's. It strecthes all the way around the building everytime I go through there. I stopped at Dons just up the street and did manage to pick up a couple of bags of pork skins though.

GRail - we have been fortunate enough to hit Billy’s in the morning. A couple cases of boudin to go and a couple boudin balls for breakfast.
Rambo - you sir are correct. This batch didn’t roast as well as the last but they tasted good. I think it’s because I had a pan of tater tots for the kids in there with them. Okra and asparagus are my favorites but I’m a fan of most all vegetables.
