Fourteen and half pounds of sliced jalapeños pickled using an “Instantpot” - new to me.
Each batch (7 batches) was:
2 pounds jalapeños
1/2 large onion
2 Tbsp chopped garlic
A few bits of Carrot (just for a little color)
2 cups vinegar
1 cup water
1 cup sugar
1 tsp salt
All into the pot and set for 1 minute

In the first picture I didn’t realize that was lid covers. I was thinking “ where did he find so many Red Jalapeños “. Great job

I’m also new to the InstantPot. I googled Instapot pickled jalapeños and doubled the recipe I found. I liked the heat but wanted it sweeter so just added some sugar.
The other thing I’ve done with the Instantpot is corned beef and cabbage using a store bought corned flat. If you like corned beef and cabbage I would try it. It’s excellent.
