Cajun Recipe from West of the Sabine River

The Wife had to have some Imaging done at Methodist Hosp, this morning and I suggested that we swing by Hebert's Specialty Meats and pick up something to "Fix?" for Lunch. She wanted Crawfish Etoufee and I wanted Shrimp and Crab Gumbo. No problem because I had a Recipe for both of them.
Ingredients:
Crawfish Etoufee Mix
Shrimp and Crab Mix
2 cans of Okra and Tomatoes
One Rice Cooker full of Mahatma White Rice

Directions:
Defrost Mixes in Hot Water Bath and then finish in the Microwave.
When thawed heat separately in 2 separate Pans
While Gumbo and Etoufee are heating fix Rice and Cornbread
When everything is done put them in separate bowls over a bed of Rice
Slice Martha White Sweet Yeller and butter.

I lived in Lafayette, LA for a year as a teenager. I fell in love with the people and especially the cooking.

I miss it to this day.

Unfortunately I could only visit and discover friends there. When I was with Continental Oil, I got a chance to go over there to Gretna and Lafayette a couple of times to help them in some offices that needed help. You can bet I did my share of "Dining" on that expense account. :tup: Matter of fact the Wiffy, just today, said "You would have made a good C**N A&&"

As it was Today also - - - yum yum yum - - - I shoulda made another pan of Martha White because them soda crackers just ain't the same but it's down and gone now. :chef: :cheers:
