Gnudi anyone?

Well I did something that I didn't know I had it in me to do. I made Gnudi at work yesterday. Gnudi is an Italian ricotta dumpling or a ravioli without a pasta skin so to speak. I thought it needed some pasta under it with gravy then placing these pillow like ricotta clouds on top. Wrong. These Gnudi dumplings were light fluffy and pretty darn good all by themselves. No need for the pasta.
