Black-Eyed Peas with Rib Meat & Okra

Made up a batch of black-eyed peas today. Soaked 1lb of them overnight last night and put in the crockpot on low this morning. Salt/Pepper to taste. I had smoked some spare ribs over Labor Day weekend and trimmed them down to a St Louis cut. I smoked the trimmings too and picked the meat, vacuum sealed and threw in the freezer. Today, half of those trimmings went in with my peas. When there was just a few hours left, I added some whole okra. My personal bowl got a dash of Sucklebusters Chipotle Gunpowder. A meal in a bowl and it was mighTfine. :texas:

If you'd take that East across the Sabine and added some Roux, it would become Gumbo, eh Pod ?

Cornbread would have definitely set it over the top. My problem is that I am trying to reduce my waistline and cornbread wasn't on the Dr's orders. I sure did have some imaginary cornbread with it in my head though. :whiteflag: :lol:

If it's the fried variety you're speaking of, we call them Hot Water Cornbread
but John Wayne called them "Corn Dodgers" in the Movie "TRUE GRIT"

Cornbread here - and many times what we call Mexican cornbread made with jalapeños and creamed corn.
