thank ya, Mam, I took some of it today and along with some Corn Tortillas, Queso Blanco and Monterey Jack, I whooped up some Enchiladas del Cheezo- - - they were very very good like that. think I'll eat it just in the bowl tomorrow with some chips

I am known for overcooking so when I do that, which is almost always; I place extras in freezer bags in portions for two me and the wife...
This works for us as a thaw and eat quick meal in minutes via the microwave or pot of boiling water

I should have broken the big bowl down into smaller ziplocks but I still may do it once I defrost it the first time and then just refreeze them.
