A special Dinner for Pam...just because

I had the whole day off to just bake and cook. :D So, I thought I would make a special dinner for Pam. :D No special occasion, just cause I knew she would appreciate it and I would enjoy cooking it. 8)

The menu........................

Beef Wellington with cheese-potato soufflé and asparagus with Hollandaise sauce for sides.
Cheesecake with cherry and sweetened whipped cream, and Kona coffee for dessert.

First I made a Duxelles.

I used Baby Bellas, Shiitake, and Oyster mushrooms.

Mushrooms finely minced, shallots finely minced, minced garlic, and fresh minced parsley.

Sauteed the shallots and garlic in butter til soft

Then added in the parsley, mushrooms, Worcestershire sauce, white wine and lemon juice.
I slowly simmered this til it reduced to a thick lumpy paste

beef tenderloin rubbed with butter, then seasoned with salt and pepper
then into a 350° oven or smoker til it hits 120° internal temp

out of the oven or smoker. spread a layer of Duxelles onto rolled out puff pastry, now place the tenderloin on the layer of Duxelles, then place a layer of the Duxelles on top of the tenderloin.

All wrapped up and ready to go back in the oven or smoker to bake til the crust turns golden brown.

OK, let's get to the eatin' part. :D

That was the other part of the loin I got the other day. This was the last of it. :(
Now we go back to normal meals. :roll: Pop corn and corn flakes. :shock: :lol: :lol:

Yep, baked it first thing in the morning ( baking it is the easy part ). :D
Just don't look to close at it. :roll: I need a whole lot of practice at piping that whipped cream frosting. Just can't seem to make even designs. I end up with all different sizes and shapes. :oops:
