It's an additional category that IBCA organizers can offer in addition to the core 3. My guess is more categories translates to more opportunities to place and hence more teams. Incidentally, most of the comps we cook in offer pulled pork has a category. I'll see if I can find a picture of one of our boxes.

Here is a pic of my IBCA pulled pork turn in box from 2012 in Deridder, LA. Don't take too much from it because I didn't get a call, but the head jjudge said to put in finger sized pieces of pork, no slices, no chopped.
