44 Farms does not sell briskets to the public (in most cases). Every once in a while they'll sell to the public if there commercial customers don't buy them out. But certainly not anything on a consistent basis.

My Uncle, Chef Eddie Ferrer told me years ago, "Find a great butcher 1st. rule". No one takes pride in their work anymore?

I've done well with Costco prime briskets but like the creekstones better when I can find them!!

Re: Warning about HEB Prime1
I block my briskets so the slice didn't pose too much of a problem. I got all of the ones that were hacked up in San Antonio. I guess that why they were $3 something a pound. I have used at least 10 that I got here in Victoria and never had that problem. At the San Antonip livestock cook off I had the gnarled up brisket, one of my 3 racks of ribs were spoiled, and one of my 3 chickens were missing the wing tips. I have never had any of that happen before and it just happened to all occur at the biggest cook off I go to.
