Go Texan brisket tag?

Postby txluke » Sun Nov 08, 2015 10:08 am

I will be doing my first Go Texan cook next weekend. I know that they tag your brisket. Will I be allowed to trim before they tag? I block my brisket and having it tagged before will make it hard.

The one thing I dislike about Go Texan events is there is no set standard rules. I would check to see if you need your meat in its original package some require this. Then you can ask about pre-blocking and tagging.
Always remember slow and steady wins the race.

I can't find any info online anywhere. The only thing I saw was on the form for the event where it said the brisket will be tagged and they have to be there when you slice it.
