Well, heading out for the initial set up! Pretty stoked. Cooking won't start till Friday morning, but I doubt I get any work done between now and then.....

I have no doubt I will post more pics than y'all care to see over the weekend.

The second load is going in tomorrow. Substantially smaller. Mainly the chicken pit and trailer, then the walls and entry gates.

Sorry I didn't post throughout, but the cell data service wasn't good enough.

It was a great way to get our feet wet and see what this particular cook is about. Our chicken and ribs did not make top 20, but it's okay, because the non-judges seemed to love them and that's what matters.

Brisket was 12th and fajitas were 17th. 63 teams competing. We've already made plans to be back next year, and, hopefully, get a call or two!

Everyone had their own responsibilities for meat this year. Mine was chicken.

I injected them with butcher bbq's bird booster, seasoned them with Yardbird, and basted them with Sucklebusters Hot & spicy. This event had some unusual rules. We had to turn in one intact chicken half and 12 slices of cook's choice, and the officials had to watch us remove the tags and slice the (in our case) breasts. It was a two personal team of officials and they had 5 teams they had to supervise. And the turn in window was all of 15 minutes for all teams. Needless to say it was a fairly stressful timeframe.

The flavor was great and I've never had a jucier chicken, but thems the breaks!

With all we cooked over the two days, we took the leftovers to the Fair Wine Room and fed about 50 folks there.

Over the weekend, we gladly fed around 30 uniformed personnel walking through the fair grounds, deputies and Texas Guard.

The planning has already begun for next year, but practices are on hold. We had a mishap with my pit and the trailer, and I've got to take it in tomorrow for some repairs. I may just have them put an axle and a tongue on it and do it right.
