My in-laws work for a group of electric cooperatives. There's a rodeo and BBQ competition once a year. They've offered to sponsor me, just so there's some visibility of their company and so they have someone with hot food and cold beer around. They probably think my Q has a shot... But I digress.
What stuff do I need to man a primitive cook site?

if it was me ....
I'd cook about 5 tri-tips ( or how many i needed) in the low 200s until they get to 125
then i'd serve them sliced as soft tacos on flour tortillas with fresh pico-de-gallo and sliced avocado

We use rolling job boxes like you see at Home Depot to store our BBQ equipment in.
Here is a list of the stuff that is in every box the rest is either on the cooker or in coolers or the truck.

I used to be OCD then I realized it should be in alphabet order so I changed it to CDO.

Always pack a slicker and a ton of ice. Seems like all the cook offs I been in either rain like Noah's Ark days or are as hot as Death Valley, rarely any in between.

I only do one cook off per year and my list changes a bit each year. Think about what you use to cook the various meats and write it down. That includes utensils, pans, plastic containers, etc. Think about how you are going to clean those utensils, cutting boards, etc. You will pack stuff you won;'t even use and probably forget a lot of things that you'll need. heck, I even forgot the jalapenos for the poppers I was going to make one year.
