Brand of Ribs

What brand of ribs are you competition guys using, are you going to the meat market, ordering online, HEB, etc. I have been struggling lately finding meaty ribs, I am thinking about going to this meat market in Houston called Pete's just to see his quality, thanks in advance.

We use SmithField St. Louis cut. 4.5 to 5 lbs.

Thanks for that, maybe I need to buy bigger ribs like that, I have been having an issue with the backside not the meat side pulling back way to far, and that could be that maybe I am leaving them to long in tinfoil.

T.S. I'm not a comp cooker but I've got to do 6 or 8 racks of St. Louis next week so I was examining the merchandise at HEB the other day and some of them looked pretty healthy - - however, since I wasnt' buying I didn't look at the Brand name or anything. :salut:

I go for all natural ribs.. brand doesn't matter as long as they are well marbled and have some decent thickness. For comps, I think cooking ribs with similar thickness is important so that they all cook the same. HEB all naturals are nice but are a bit pricey.
