Protein modifier

Hi all,

Posting from little old New Zealand. Competition BBQ has taken off here in the last 18 months!

I have a question about protein modifiers or enhancers. I inject with store bought injections containing phosphates which works well and have trial injecting at different times prior to a cook to get the best results.

Are there any other protein modifiers that people use? I've heard of heat and/or moister activated gels or powders that people use to retain moisture. Is anyone familiar with anything like that and where to buy?

You might try ButchersBBQ products, some of the best injections around. I use the pork and beef injections for competition cooks. He won the Jack Daniels cookoff this year.
