Hello guys!!! I´m very exited due to I´m going to my first BBQ Contest in my life, is here en Mexico is a Rodeo Fest in Saltillo Coahuila (4 hrs from the border with Texas) my crew and I need some ideas of sides that are going to be part of the evaluation we need the best side for each category, first one is Brisket and the other one is a full rack of pork, we need to show at judges a table with our final product in Brisket at least 4 pounds with a side (help us with this) and for the category of pork we need to show at judges a full rack of ribs with the best side (help us).
Any comments or suggestion with the sides and preparation process will be very welcomed.
Note:
Rule: We only can cook with wood or charcol!!!
Sides for a competition next March!!!
