You're making a great rig right there! You will be very happy with it.
Oh and you will be able to get 16 butts on the bottom racks alone if you don't use pans. And I wouldn't personally I let the smoke get all the way around them until 160* then wrap them until 200*. Then you could cook about 30 of them.

They will be using pans so they don't have the huge clean up at the end of the day. This will be used for kids camp. Excited to see how it performs, I have never built one before.

Ok parts are coming in. I am going to make this smoker fully automated propane fired. I sure hope all works out for me here.

1000 gallon tank smoker!
Not completely sure. I will have a box that will have controls in it. There will be a built in safety so it will shut the fuel off it doesn't light when it's suppose to. Draw back I need 110v supply. It's not all put together yet, but I will keep you posted.
