500 gallon (i guess reverse)
Hello everyone!
I would like to build 500 gallon smoker (Ordered 0.26x100x42-inch tube - 6x2500x1000 mm).
I want to have stable temperatures across the smoker. Not sure if I can handle same temperatures across 100-inch normal offset smoker. (But I saw video of Moberg Smokers and that was pretty accurrate!). Normal/Reverse? Would like to do one type of meat (pulled pork with ribs or alone briskets).
But I have few questions regarding the build.
I used calculator: Link to BBQ Pit Calculator
Firebox:
35x35x35 (102%)
Chimney:
Round 8x42
But I have few questions:
Green question mark: As per calculator, this should be 343 in^2. That is pretty clear, but.. How should I cut it? Leave some space from top (as heat shield). Or it should be in same level as top of firebox.
Orange question mark: I guess this should be exactly same as firebox > cooking chamber hole (343 in^2). Right?
Brown question mark: I will have cylinder shape, so there is no "tank round shape" to help the airflow. Do you you any bent plate to have "fake tank round" shape?
Red question mark: Hole for chimney will be round 8-inch as rest of chimney. Right? Do you count chimney lenght from hole or from top of smoker?
Thanks a lot!

Math makes me dizzy BUT I can offer that reverse is the only possible way to get even temps all the way across a giant cook grate.

You are building a monster...fire box needs no top lip...on my builds my flow plate is at the fb level......leave an inch or more bottom lip to stop grease run back...chimney is from attach site to top of pipe...forgot the rest of the question...as I am new here I may be stepping on toes...
Those that know eat low and sloooo....

The top of your firebox should be where the reverse flow plate starts. Leaving a distance at top causes the heat smoke to travel back down and into the tunnel. Leave about 2" on the bottom for a grease trap.
Orange question mark: I guess this should be exactly same as firebox > cooking chamber hole (343 in^2). Right?
Yes the opening opposite the firebox should equal that of the firebox to cooking chamber opening.
Brown question mark: I will have cylinder shape, so there is no "tank round shape" to help the airflow. Do you you any bent plate to have "fake tank round" shape?
There is no need for any type of curve to ease the flow it will do fine.
Red question mark: Hole for chimney will be round 8-inch as rest of chimney. Right? Do you count chimney lenght from hole or from top of smoker?
Count the total length of exhaust not the top of the cooker. IE if you put your exhaust on top and extend to the inside 6" then start your length at the end of the 6". In your case your length starts at the top of your 8" circle.
Thanks a lot!
I hope this helps.

Re: 500 gallon (i guess reverse)
k.a.m. thanks!
What do you think about smaller firebox (not exactly 100%, but something like 70-80%). I see franklin is using smaller.
When Im changing firebox dimensions = it changes throat(fb>cc) as well.
And second question: recommanded space between plate and cooking grade?
Thanks a lot!

Distance from plate to cook grate should be as large as you have room to get it, within reason.
I would go at LEAST 8/10 inches or more.

Re: 500 gallon (i guess reverse)
So first "blue print" ..
FB to CC is 400 in^2 (2 580 cm^2)
CC - plate opening is little more.
Have question regarding space between first cooking grade and that opening. Should I leave space there? (12 cm currently 4.72 in) (that red line on picture 2)
Plate will have little tilt (from 40 cm to 38 cm; V shape). So it will leave 10 cm (3.93inch) between cooking grade and plate.
Any recommendation?

Update!
First run - bacon; pulled pork and porchetta - 80kg of meat inside.
And trailer is finally completed! Now we are brainstorming how to bind it together.
