I didn’t paint inside of my firebox and cook chamber. Most commercial units are painted inside and out. When I seasoned mine, I washed the inside of both chambers with Dawn to cut any oil on the metal. I then ran it wide open, 350*+ for about 2 hours to further burn off any crap then backed down the temp and started spraying the cook chamber and shelves with cooking spray, let it run for a bit, spray it down again and let it run, 3 times maybe, I can’t remember. I then did a biscuit test to see how even the heat was and ate the biscuits. I didn’t die and didn’t notice any off flavors. Heat rises, your vents look to be on the side and shouldn’t see any direct fire so you shouldn’t have any issues
