Whether I'm using Einstein or Roma, the method is the same. I fill the fire box with lump till its about level with the air holes on the sides of the firebox. Then I take enough lump out to that would about equal a softball and invert a chimney. Lump on top (small end) of the chimney and cumpled newspaper underneath. Once the lump gets going I transfer it to the top of the lump in the cooker. Close the lid, open the top and bottom vents and watch the temp climb. When the temps gets a little over 200° I close the vents down a bit. Bottom vent is the course control and top vent is the fine tuning. With time and experience so figure it out. I can usually adjust to the cookers will settle in at 235° to 245° without much fuss. I suspect the BK behaves the same way.
It is much easier to go up in temp than to go down in temp. You can gain 50° in seconds, could take the better part of an hour to lose 50°.
I recommend only doing 1 butt the first time. If they are big butts and you double up on them, there will be too much fat dripping on the lump for the lump to burn off.... resulting in fat dripping out of your bottom vent. Trust me on this one Conversely, if you put a drip pan you run the risk of a grease fire when you eventually open the lid -all that air rushing in.
Also be aware of FlashBack with high temp cooking. Crack the lid open for a few seconds before opening it all the way.
And, calibrate that thermometer now. From the factory they can be off by a huge margin.

Don't laugh...I'm getting a couple new 55 gal drums this week to make a couple Ugly Drum Smokers. The wife thinks I'm nuts. But I'm gonna give away at least one UDS to my brother who only has a Oky Joe offset.
