So I just got this guy for fathers day and cured it last night. Could not really get it hot enough (over 350). Will that be a problem? Also, any of your thoughts on this unit? Im going to try to smoke some brisket for the first time tonight. I have been smoking in a small unit for years but nothing this big. Im excited to step up my game! :shock:

Should be okay as far as the seasoning goes, some might do more. i've cooked on non seasoned pits as new and never had a problem. As far as the brisket, do what you normally do, its time and temperature. Although each pits has its own idiosycracies but you'll figure it out. Have fun.
