Seasoning a restored offset Smoker

Hello all,

I am BRAND new at smoking in an offset smoker and brand new to this forum. My brother in Law gave me his old 16'' Horizon smoker (with horizontal and vertical cooking chamber) that was collecting lots of rust over the last 4 years in his backyard. Anyway, I put some serious hours grinding all the rust, soot, and grease off the entire BBQ in and out. I even painted the whole smoker and it looks fantastic! I bought all new grates for it and it's ready to go!

My question is how do I re-season this refurbished smoker? Is it the same as re-seasoning a brand new one? I've done some research online but there's a lot of conflicting information. A step by step would be great guys!

I did the same thing on my Jambo clone, with my F-I-L helping. Lots of hours of grinder time. After cleaning, I rubbed the inside with lard and ran a 250 degree fire for a couple of hours. Good to go.

Some folks swear by bacon grease. Others use a spray can of oil. Lang smokers has a very detailed seasoning process that is too elaborate for my lazy butt, but you might want to take a look see.

I will tell you how I season all my cookers.
1st. Rinse it out to get rid of any residue or rust dust.
2nd. Build a fire in her and run her up to 300° to 325° and let her dry out.
3rd. Once she is dried out lightly coat the inside with spray Pam and keep her at the 300° for at least an hour.
4th. Have about 10 lb.'s of leg quarters seasoned up and put them on the cooker to finish off the seasoning.
