Finally bought an offset.
I was looking to get an Old Country Wrangler awhile back, I finally found one at the Woodlands Academy. After reading about them here, decided to use the original fire box plate as a tuning plate, added cast iron grates for the fire, and added temp gauges. It really does smoke well for a budget offset, temps are stable and consistent across the cooking surface. Here are the results of my first brisket and porkbutt.
