Lonestar 20 inch horizontal pit griddle use

I've got the 20x36 offset horizontal. It has a griddle above the fire box.
Can you guys give me some pointers on using this?
Best fire and how hot.
Pit configuration while using it.
Etc etc

Mine has it but I have yet to use it. For griddle stuff I just use the blackstone. I plan on using it in the firebox for pizza at some point.

I plan on having a custom grill grate made to replace the griddle. I think a stainless lazar cut one would be ideal. For my cooking style I don't think I'll get much use out of the griddle. If I ever need it. I can always pop it in. The 20" series cookers have a lot of flexibility engineered in which is why I sold my Shirley 24x36. Don't get me wrong the Shirley was great but I just wanted to do more than smoke.

Well I've learned to use my griddle. It's awesome. Over made grilled veggies on it. I've made Fajitas on it. Finished smoked brats on it.
It's actually pretty good.
I do see how a grate the size of the griddle could be a nice addition.

As far as the fire, I find it better to not use the fire management basket. Make a bigger fire than what's used for smoking.
