Salt dome steak.

These are photos of a cook last Saturday of salt dome steak. This was the best steak I ever made hands down. I got the idea off of YouTube from a guy who goes by Pitmaster X.

Never had a SDS, how do we cook something like this process wise ??
Sounds interesting seeing as tho I'm a Salt Junkie :)

Pitmaster X does some interesting stuff. I have really enjoyed watching some of his videos because he definitely thinks outside the box!

Looks good but you left some of the best meat on the bone :) me and the dog fight over that.

This was done with a 2" thick T-Bone. Very easy. Take 2 boxes of salt mix with egg whites to the consistency of sand you would build a sand castle with. Put down a bed slightly larger than the steak. Lay out a blanket of bacon as a shield from the salt. Place herbs of your choice. I used rosemary, thyme, oregano and sliced up garlic. Place the steak on top of that and do a reverse layer of herbs on top. Place bacon on top draped over the edges to shield from the top coat of salt. Insert temp probe and seal it in the salt. I had the Joe at 300 dome temp and put it on. After 15 min I put our other steaks on. They all hit medium rare+ at the same time. I brought them in for a rest and get the grill hot for reverse sear. While it heated up I cracked the dome and removed the steak. Brushed off any salt that got on while extracting it and reverse seared it. Honestly takes longer to explain than to do it.

Very nice cook. Never have tried salt dome cook on the egg. Bookmarked
