Bacon wrapped pork tenderloin
For my dads birthday we did something a little special. I got a huge pork tenderloin and did a bacon and maple syrup wrap on it. Then it cured for two days in the fridge. It was to big to cook in one piece on the Big Joe so I had to cut it in half. When it was done and resting I grilled some peaches for a salsa. Overall it was a nice relaxing and filling dinner.
Thank You to all the fine folks here for all the tips and advice so I can now smoke a chunk of meat and folks actually eat it.

Happy belated BD to your Dad. That looks great. I bet that bacon wrap helped with keeping that loin moist.

Hey Russ salsa is super easy. I split and grilled 4 peaches. In the bowl I chopped them up and added a little fine chopped red onion, jalapeño no seeds, mint, and juice of one lime. Stir it all up and let it sit about an hour. The longer it sits the better it gets.

Bacon wrapped pork loin is and probably always be my favorite meal!! Salsa sounds delicious too!!
