Apple Smoked Pineapple & Cherry Ham

Apple Smoked Pineapple & Cherry Ham
Well, part of our Rib Roast gift was accompanied by a Bone In Ham.
Tomorrow we won't have time to cook anything and New Years Eve is Naan Pizza night with a few friends so I figured I'll throw this on the Akorn tonight seeing as it's beautiful out, about 40 degrees which is warm for here right now. Plus, I still have about a 1/4 basket of Lump left so I may as well do it.
Trimmed most of the fat but left a little, hit with the usual Yellow Mustard " ONLY TIME " you will see me touch Yellow Mustard. Did some 1/4" -3/8" deep cuts vertically and horizontally ( just a habbit ) Then applied a mix of the little bag of Prime Rib seasoning that I found today in the back of the cupboard and some Herbs De Provence rub.
Added some Pineapple slices and used my absolute favorite Maraschino Cherries " Mezzetta ".
Whole Cloves are always on hand here and love using them.....as long as nobody chips a tooth on them
I'll spritz randomly with water and near the end I'll sprinkle a mixture of White Sugar and Cinnamon.
Used to use Apple Cider and Apple Cider Vinegar but I didn't like the tart taste.

I've gotten burned in the past trimming fat but I can't stand biting into a big ole hunk of smoked ham and getting nothing but fat. Our son Loves ham and if he encountered fat in his bite, we would be down to about 3 foods that he likes

Yeah, it's a fine line that I used to cross. I'm hoping I didn't take too much fat off of this one. Another 20 minutes It'll be about 135 IT so I'm gonna pull it, snap a few pics, let it rest an hour and wrap it for tomorrow's slice and vacuum pack session.Rambo wrote:I aggressively trim everything.
I'm not hungry at the moment, but I'm looking at the caramelization on the Pineapple slices with the water and Sugar/Cinnamon mix and I want to steal a piece.

May have went a little too heavy on the Sugar & Cinnamon, not because of the color of the caramelization but because it had way more kick than i expected from the Cinnamon.
At least I know Deb and Evan will eat the inner slices so I'm not too worried about the crust. I'll take care of that .
Should slice up nice tomorrow, we'll see.

I inject my hams with the little cans of Dole, 100 % pineapple juice and then put a light coat of dark Karo Syrup by hand and sprinkle with brown sugar. Everyone seems to love them. You have to keep the temp under 250: I’ve read sugar burns at 265

Thanks guys, I was hoping to get to slicing this up earlier but been tied up lately. I appreciate the nice comments, I think next time I'll take Rambos advice and do exactly how he says he does his. Too much cinnamon and sugar made it a little too hot.
I'll also use a smaller chunk of Apple, was a little on the tart side from the heavy smoke. It looks burnt or overcooked but it's definitely from the heavy smoke and sugar even tho it ran at 225 the entire time.
Oh well, live and learn

Well I finally got around to cutting the Ham up.
Tasted a few scraps and it was really good . Kicking the idea around of making a Ham, Potato and Broccoli Cream Soup. Not sure yet but i think that is where I may go with this one?
