Second Attempt at Brisket on the Pellet Cooker

Postby Swamp Donkeyz BBQ » Sat Apr 09, 2016 12:05 pm

Slowed it way down to 230 for 6.5 hours, then panned it and cranked the heat up to 300. I also added a water pan, and put the brisket on the top rack this time. Turned out really good. I am not disappointed.

By the time I got through trimming it, it was probably around 10 pounds. Total cook time was 9 hours.

Hey Neighbor, did you use any extra devices for adding smoke or was that smoke ring straight from the Pellet Grill :?: :?:

Straight from the pellet grill. I think the added moisture from the water pan was a big factor, besides the lower temperature.

lookin good.... nice and moist...
the lower temperature means more pellet burn, more wood burn means more smoke, more smoke means more nitrates which equals better smoke ring....just my $.02

Actually I pre-warmed the oven and let it rest, covered, in the pan for 2 hours before slicing.
