I plan on cooking the roasts at home next weekend then taking them to the reception.
My concern is when I wrap them and stuff 6 of em in a ice chest that they will continue cooking.
They will probably have to stay in the chest for close to a hour.
I'm thinking maybe after I take them out of the smokers I'll let them rest say for 15-20 minutes uncovered to slow down the internal cooking,Then wrap and stow maybe 2 each in individual chests
What's ya think? Anyone got got any thoughts on this ?

I have never done this with prime rib but with brisket I have the best results letting the meat rest on the counter until it gets to my slicing temp. Then I foil it and put it in the cooler. Sometimes I preheat the cooler with some hot water or hot packs.

Glad it's you, Bill, and not me - - -however, you might make two signs for the ice chests that say
"HIS" and "HERS" maybe for clarification a sound effect on the "HIS" that goes "MOOOOOO" when opened OK, I"ll s'hup now

I plan on sneaking a couple off the smoker early.
Thanks sooner. Kinda what I was Thinking. I'll leave meat probes in and won't wrap till temp starts to drop.

I have a soft sided cooler I like to use for keeping meat warm. At family gatherings I put a sign on it "Keep closed no beer in here". I've still come back in and found it unzipped from somebody looking for beer and not zipping it back up…

I let my prime rest for almost 2 hrs double wrapped in a cooler.
Temp only went up about 15 degrees.
It was slightly overdone for me but I couldn't take any chances with a preggo wife.
It was moist as can be

Probably not the right thread to post this in but.....I'm old
I'm thinking I got the pellet smokers figured out for the beef so ....tonight fired up my block smoker to clean the cooking grates and to deport any illegal aliens that have taken up residents there.
Been about a year since I fired the old gal up.
Plan is to smoke the 3 dozen racks of pork ribs in her for the reception.
Didn't take long to get up to self cleaning mode....
500 degrees usually cleans her out
