Prime rib test run

As I stated in another thread I got a big cook coming up next weekend. Besides the roasts I got for the reception I got a extra for a test run. The test flight monkey just went in the RecTec. :dont:
I figured I would be better off ruining a $80 chunk of cow today versus $600 on the day of my sons wedding reception.
I had the butcher tie the bones back on the roast. I've always done the roasts that way before but this time I kinda wanted to remove the bone then season under the bones and then tie bones back on. Only problem is I couldn't find any butcher twine in my home town :shock: I know I can find some twine at the restraurant supply next week when I pick up the pork bones, so for now the test roast didn't get any seasoning under the bones.
This is my plan so far starting 2 days ago.
Gave the test monkey a light coat of kosher salt, wrapped back up in plastic wrap and set back in fridge for 2 days.
Removed roast from wrap, pat dryed with paper towel...I had rinsed roast prior to salting .....
Gave roast a liberal coating of Worchester, then Olive oil. Finished roast with a patting down of Montreal seasoning.
RecTec set st 225 in extreme smoke mode with no additional smoke devices.
Inserted Maverick meat probe in roast upon setting on grille...read 48 degrees
Maverick ambient temp probe at grille level settled in at 226.

Still cruising along at 225. I did turn off extreme smoke after 2 1/2 hours.
At 3 1/2 hours IT at 99

Plan is to crank cooker up to 400 when IT hits about 110-115. Remove from cooker when IT hits 130.

You are cooking that EXACTLY how I did my last one Bondo..
I think it took a total of 4.5 hrs cook time and I let it rest 90 minutes wrapped.

I bet you love your results.

4 hours 15 minutes in. IT at 115. Just cranked up cooker to 400.
Would like to pull off at 125 degrees....but afraid me wiffie may complain about ...."its still red" :deadhorse:

Summary
Removed roast at IT of 130. Lightly foiled and reinserted temp probe. Probe showed 127. Wrapped with more foil while on the kitchen counter. Within a half hour IT had climped to 135. Unwrapped at that point to let rest and cool. By now the other half was hungry :roll:

May be one of the best Prime Ribs I've ever done.
Tender, moist, light smoke and full of flavour.
Like I said....I prefer it a little rarer, but as me wife said, "remember next week you be cooking for other folk and they may not like it the way you do" :roll: :whiteflag: :rose:

Very Prime Looking Prime there, Bill, don't know what it is about Wimmin and Meat Juices but it seems to be a gender thang :scratch: First time I ordered steak in front of the Wife, I told the Waitress "knock it's horns off and wipe it's butt and put it on the plate" -- - Glad we were in my truck cause it would have been a long walk home. :laughing7: That was 14 years ago and we're still together.
