Thanksgiving Spatchcock Turkey

My FFA acquired hen is thawing in the fridge, and will go into the brine in the morning.

I’ll smoke it spatchcock style, using pecan with a butter rub.

I hope it turns out as good as the recipes say it should!

Anyone else smoking their turkey?

Back then it was local, Clarence and Irene, Bonnie’s parents owned and ran it. Clarence had a sign behind the bar: “ I made a deal with the Bank: they don’t sell Beer and I don’t cash checks “ .

It was amazing.

Strange thing happened tho....my amazn maze flamed back up during my cook. With the lid closed I didn’t notice...but I had the maze next to the temp probe, and it shut the unit down. At first I thought I had tripped a breaker, but upon opening the lid I found the maze of ashes. It burned rather quickly.

Have anyone you had an amazn maze flare up?
