Cooking On The Smokefire EX6

I did two prime HEB briskets yesterday. Total cook time was around 13 hours. Started out with a Smokeboost setting for two hours, then began the actual cook at 220F. I used two additional probes from my Fireboard using two probes per brisket; one for the point and one for the flat.That way I can tell if I need to rotate the meat during the cook, which I did later on.
When I got the desired bark on the meat, and it hit 155F, after 11 hours of cooking, I wrapped in butcher paper, then finished the cook inside in our dual ovens. Why waste the pellets on this type of cooking?
Meat came out perfectly tender and moist. Wife was impressed as she doesn't really care for

Umm Umm Umm - - - :tup: that bottom pic is like reading a Proper Brisket Book with your Eyes.

The flat was truly a "flat". Never had seen one that thin on a prime brisket.
