Came over to the Dark Side

Postby Capt Jeff » Wed Aug 18, 2021 10:30 pm

Howdy from College Station, TX! My Weber Surefire EX4 finally arrived on a truck Monday and got assembled and software updates yesterday.

Did the initial "seasoning burn" this morning while a pack of chicken breasts were soaking in brine.

I am truly impressed with the ease of operation. My last smoker was a Gator Pit offset stick burner. I rarely used it because of the time and effort required. I will definitely be running through a lot of pellets. I can foresee using this several times a week, and the oven taking an almost permanent vacation.

Lovin' life on the dark side of the smoker world!

Congrats! And welcome from just down the road... Brenham (actually, just outside Independence).

I had a stickburner I picked up at the Academy near you. Loved it, but as you say, it was a PITA to always start, feed, etc. Switched to a Camp Chef pellet smoker a few years back, and love it! Easy to start, runs forever (just keep feeding pellets every few hours), plenty of smoke. Being able to hold a steady temp is a gift from the heavens.

I think what I love most is being able to put a brisket on one day, let it run overnight low & slow, and finish the next day. Without waking up every few hours.

Enjoy!

Congratulations. I'm sure you will be happy with it.

I have had the same smoker for about a year. Had some issues with it, but it has been rock solid after upgrading with new parts from Weber. I have a post about it here in the forum:

It gives a lot of smoke, stable temperature and great results IMHO. The wifi control is great for monitoring the cook. Much better range than Bluetooth.

Look forward to seeing pictures from your cooking on it.

Had a Smokefire EX6 since last December. We cook something on it about 3 times a week, from 12 hour briskets to hot and fast smashburgers. You will love it. Keep it clean and won't fail you

Welcome, and I HAD to quote my friend apart son that one.
BE WELL, BUT NOT DONE
Hank: "Do you know how to jumpstart a man's heart with a downed power line?"
Bobby: "No."
Hank: "Well, there's really no wrong way to do it."
