Well, I tried to do a reverse sear on a 1 1/2 pounder ... did not use the Kamado Joe, had to try it on the Weber Performer. The Performer has delivered incredible boneless chops, chicken breasts, even a delicious flank steak!! Instead of putting the charcoal boxes on either side of the grill, as I did for the chops and boobs, I set both boxes to one side. Set two sweet potatoes close to the fireboxes but on indirect heat. Steak was placed on the cool side for 30 minutes at 350 / 400, same as I typically set up on the Joe. Well, at 25 minutes it was temping at 120 ... not good!!!!! I still needed to sear, it looked raw on the outside. I thought my trusty instant read thermometer was off, placed steak over direct heat for 2 minutes a side, got a really nice sear, let it rest five minutes and ... voila!!! I had a Hockey Puck!!!! Man it was a beautiful steak too before I murdered it. Seasoning was perfect ... but still a hockey puck. By the way, sweet potatoes were perfect.
I can't believe that I killed a steak for the first time ever!!!!!! At least I have plenty of scotch to get over it while listening to The Allman Brothers Band "Live at Fillmore East" to celebrate and pay respects to the late Gregg Allman!! RIP Brother Gregg ...

Well, was invited to go boating on the Gulf of Mejico today. Took off from our friends house in ST. Pete, they live on the intercoastal. They have a great outdoor kitchen and I looked at it with a bit of jealousy. When we returned I was informed that my wife had bragged about my cooking skills as a result I was "elected" to grill 5 gorgeous bone in ribeyes, about 2 pounds each! I was also told I would be grilling chicken skewers. I have never cooked on this grill, no clue about hot spots, heat control, etc. I winged it ... perfect grill marks, cooked to perfection! Managed to serve chicken and steaks at the same time!! go figure right? So I am now ready for a celebration scotch in my backyard.
