My UDS
made my first UDS this weekend. Cooked a "FATTY" to season it. Read 2.5 hours for cook time and it was over cooked. Side temp read steady 250. Now I hope barrel was burnt out and prepared well enough. Feel uneasy about potential toxins killing me.

Any advise on digital thermometers? Duel probe for under $50 maybe.

Some smoked chicken breast. Just dry rub from stuff lying around the house. Taste smoked. Will need to get some good recipes.

I've seen wireless thermometers at Home Depot, Lowes & Academy for under $30. I have a cheapo duel probe wireless from Walmart that I use as a backup and it's always within a few degrees of my IGrill2. Think I paid about $17 for it.

well, of course I ended up getting the Maverick ET-733 with Bear Claw shredders on Amazon.

did your drum have the orange anti rust paint on the inside and how did you get it off

No orange paint inside. You can see in pic above, it apears to be plain metal. I still burned it out. Watched it for about four hours then went to bed and let burn out. I thin sanded inside with rough and fine sand paper. After all that I washed out with powder dish washer detergent and dawn dish soap. Now I just hope all is well and I don't poison my family.
