Well I have cooked 3 times on the uds. The first was the dropped butt. second I dried out some thighs third I overcooked some leg quarters. I have a hot spot that has to be attended to. I have some scrap iron here at work that could solve the problem. I have never had a smoker before. does the dripping that burn on the deflector give off odur>

My brother just uses a aluminum turkey pan on the bottom. Works great!
How bout some more beans Mr.Taggert? I'd say you've had enough!

What type of temperature gauge are you using?
Have you tested it with boiling water and against a 2nd thermo that you trust?
How long did you cook the thighs that overcooked?
Is it a 55 Gallon?
UDS - Not so ugly, but I may be biased ;)

Think I figured it out. When I let my lit coals to the fire basket I let them out in the center of the basket
So I spread them out, made a makeshift water pan and scavenged a grate from a side burner off of an old gas grill. Will post pictures.

I use a diffuser. My design allows for very even air flow.
