I never noticed how up and down the temps on my electric smoker get until I got this thing. It's dialed in at 225, but I've seen them as low as 210 and as high as 250 on the maverick.

Can't wait to test it on my UDS.

Ok has anyone having issues with their Maverick? My ATC and pit thermometer both show 250 and the Maverick shows 295.

If your therm is not exactly where the Maverick probe is they will read different. Unless your therm has been calibrated, I'd trust the Maverick first.

Put the probe in ice water and see what it says.

Well they are made in China ya know. I just threw one of the probes away from one of mine this morning, the temps had been acting inconsistent some time now so I didnt use it too much anymore, have had that pair about 3 years at least and they have been very good. Recently bought a new pair the Acu-Rite's from Academy but dont remember if they were Mavericks? The newer ones are very quick to read temps so I like them better for that reason. Have screwed up a couple of briskets due to bad readings so now I check them before every cook off.

What i noticed last couple of times including today is that if that probe is not most of the way in on those the reading will not be correct, it seems to take an average from the tip being in boiling water and the rest being out of the water. I tried a larger pot so the probes would go most way under and noticed while pulling it out slightly that the temp would go down even though there was a good portion in the water. The newer Accurites's only need the very tip in the water or meat to be accurate.

The Mavericks need to be plugged/pushed in very well in order to read.

Also, the chord coming out the probe needs to be a little straight, if it is at a 90 right out the probe you may have problems with accurate temp reading. I had one jumping all over on me and that was the problem.
