Temp gage question.

Ok so I have decided on bludawgs butcher paper hot and fast method Only question I have is I'm going to use two thermometers both with the probe you can leave in the pit . One will keep an eye on the grate/ pit temp and I have heard you can stick the probe in a potato next to your brisket can anyone confirm this. Also the other temp probe will be for checking internal meat temp... Can I just leave the probe in the meat for the whole process . By the way after the learning curve I plan on ditching the temp probe

I've been Qing for many a year and I still use a meat probe as a rough guide. You still need to 'feel' the meat, but the meat probe is a good tool. You can leave it for the entire cook. AFA the pit probe, I just clip mine on the rack next to the meat.

Forget the meat temp its irrelevent just follow the instructions as writtten.
Never met a cow I didn't like with a little salt and pepper.

I agree with Okie. The meat probe is a great tool to alert you to when its time to do the poke test. The only time I Que without a probe is when a smoke ribs, but I wouldn't consider doing chuck, butt or brisket without a probe.

I used Bludawg's method this weekend on 2 briskets. I have the Maverick temp gauge with the meat probe and the grate probe. I just used the grate probe to monitor the temp of the pit and to see how correct my Trutel temp gauges were. The temp gauges were pretty darn close to the grate probe. I just left the meat probe on the table. Everything turned out great! Thanks Bludawg.
