Postby Hj » Tue Oct 05, 2010 7:52 am

10 lb. watermelon seedless if possible
11 T. flour
7 T. cornstarch
2 egg whites beaten
3 c. canola oil for deep frying use
Powdered sugar

Cut watermelon in half - scoop out the pulp.
Remove any seeds from pulp and cut the pulp into diamonds.
Coat with flour.

Mix egg whites with cornstarch n a little water into a batter.

Heat oil in a wok or skillet over high heat till small bubbles appear around a 1”inch cube of day-old bread dropped into the oil.

Dip watermelon pieces in batter ñ add to oil. Deep-fry until the coating becomes firm.

Turn off heat- continue to deep fry watermelon until
it is light brown.

Remove- drain well- sprinkle with the sugar- serve. Repeat procedure with rest of watermelon. Season with salt ñ pepper either before coating or after coating.

This is definitely a first for me. Never heard of it, but then I would have thought someone was crazy for deep frying ice cream a few years ago.
