OK guys & gals - we had such a great time this past spring at Papa Tom's place at the 1st Wurst get-together. We learned a lot, worked a lot, drank some cold ones and ate well not to mention making some new friends. Everybody brought some casings and some meat (pork, wild pork, venison) and we all shared and went home with plenty of sausages (andouille, summer sausage, jalapeno cheese brats, cheddar brats, polish sausage, etc..).

I have been kicking around the idea of hosting another one after the first of the year. I've got access to the perfect place for one whatever the weather may be with lots of refrigeration, sinks, tables, etc.... I don't have a date nailed down, but I am thinking of sometime in February or March after the holidays when everybody gets settled back down. Nothing is set in stone, but I just wanted to put this out there to see how many may be interested to see if it would even be worth it.

You don't have to have previous sausage making experience. Papa Tom is our sausage guru and when I talked to him he said he would like to come. Others of us have minimal experience, but enough to get everybody going. A few of us have grinders and stuffers which should cover the equipment needs.

I know I am on the far north end of most of our local members, but it really isn't as far as some of you imagine. The property is in Pottsboro, Texas which is 1hr 10min due north of downtown Dallas. We would need to start early, as sausage making takes some time. I think it would be a great time. Y'all let me know what you think or ask any questions you may have.

For those contemplating but lacking sausage "stuff" don't worry if you bring some meat in a cooler you will go home with sausage. I have enough supplies to do a medium size elephant so don't fret that. After the event you can better decide if and what you might want to purchase.
You have plenty of time to think but you might start deciding what kinds of sausage you'd like to make. We can do most anything short of salami or dry sausages those require fermentation and that requires more time and facilities. But most any wurst, smoked or summer sausage can be done.

Count me in, hope to get a sausage stuffer and meat grinder by then.

I am in ... its alot of hard work - but you sure wont want to buy store bought stuff
after eating the fresh flavorful stuff - I want to do some jalepeno and cheddar and
brats :shock:

If you come you will have a great day of fellowship and alot of cutting - grinding - grinding - mixing - stuffing .. its great

OK - It looks like enough may want to attend to make it possible. I know that it all boils down to the date and that one date won't work for everybody.

For you bbq comp cookers....is there an off-season for you all that would work best? I'll try to put together some different dates and we can see what would work best for most.

dheidemann - we could do some boudin. It's a little different than the other sausages because it is all pre-cooked before it goes in the casings, but we could do it.
