When to rub your meat?

When to rub your meat?
Just wondering when you guys add your rib rub? Night before? Couple hours before? or Just before you put it in the smoker? Is there any pro's or con's against either method?

I just do the rub when prepping the ribs then into the smoke.
I've tried all the different ways and have noticed some difference but couldn't say any method was better.

I normally put my rubs on 1-2 hours prior to putting on the smoker/grill. Then I leave it out while prepping other stuff. Sometimes I'll wrap it in saran wrap.

When to rub your meat?
If I am bringing it from the fridge and to the pit, I usually just coat and put it on. To me, the colder the meat is when it hits the smoker, the more smoke it's going to take in. If I am grilling, I will let it sit out for a whole. Either way, I don't normally rub ahead of time.

I used to just rub about 1 hour before, however I do seem to get more flavor if I rub overnight. That at least seems to be the case for me the one time I tried that. It does require planning ahead though.

so dont you have a big slurry of a mess in the morning from the injection leaking out and mizing with the rub? do you dry it and rub it again? or do I have to attend your school to get that answer?
