SD going middle of the road @275' got the UDS dialed 2 1/2 hrs ago and it hasnt moved . Should have had one a long time ago .

SD it came out really good ! Smoked for 7hrs @ 275' was probe tender at 205' . Wraped and rested for 2 hrs . Then pulled , it was super moist . Was impressed with the moister in side never wrapped during the entire cook. The bark had a great flavor . Used a rub that I have been making for several years , mustard slather , and some brown sugar . Injected with apple juice , wooster , and brown sugar . Let sit in fridge over night . Set out for 2 hrs and hit it with a little more seasoning . Internal temp was 43' when put on UDS . Was out of lump , used royal oak charcoal with hickory chuncks mixed in . The smooth smoke flavor was thru out the entire butt . Made some really good burritos this morning . Having pulled pork sliders for lunch . Almost forgot put the E nc pig juice on while it was resting .

Sliders for lunch with bushes mesquite beans and tater salad . Three meals and still got leftovers. Wow , didn't realize how much meat u got when pulled !
