Christmas ham in progress!!

This is day 6 of my dry cure phase. Picnic shoulder.

It has lost a good amount of water weight by now. It started out a tad over 9 lbs, now it's at 6.5. I'll begin phase 2 either tonight or tomorrow. I will give it a sugar bath for the next 6 days. After which, I will let air dry until the 22nd to be smoked on the 23rd. More pics to follow, stay tuned!

Lol, I just went to the pub last night and won a ham in a raffle. It's in the freezer til New Year's Eve. Hot glazed ham then.

Phase 2 begun yesterday. Rinsed the ham of all excess salt and placed in a bath of water, brown and white sugar, a little honey, and some cure#1. It will bathe for about a day per lb; 1 week.

Freshened the bath for it today. Just dumped what was in it and made more just like it; To prevent over-saltiness. Couple more days then it gets to air out for a week. Can't wait!

OK, forgive the stupid question BUT do you keep this refrigerated while doing all the various stages :?: if not, then isn't there a chance for spoilage :?: I told you it was a stupid question :dont:

Absolutely! When ready, I will hickory smoke it at about 180-190 for 14 or so hours.

The ham to be is now out of the bath and on the rack to age a week in the fridge before smoke! I can not wait!!
