Tzatziki contains yoghurt which IMHO wouldn't go with it. But I've been wrong before, back in 1980,lol

I always get Tzatziki on my beef & Lamb Gryos from a little mom & pop place at the end of a walking bridge that goes to Jersey. Best Tzat I've had but I'm leaning towards your thoughts as well.
Probably not great with Corned Beef.

Bernaise on the other hand would probably be awesome.
I'll try it and let u guys know.
