Prime Rib and SPG

Postby bondobill » Mon Jun 19, 2017 9:18 am

Smoked up a Prime Rib that had been in the freezer for Fathers Day.
Thawed it out then gave it a light coat of Kosher Salt. Wrapped up tight with plastic wrap then back in the fridge for 48 hours.
Sat. Night unwrapped it, gave it a slather of OUPs favorite worst ever sauce.
then a healthy coat of Gators SPG. Finished it off with a light coat of Montreal seasoning for a little extra pepper. Wrapped back up in plastic wrap and back in fridge overnight.
Sunday I set the pellitsizer at 210 degrees and placed the roast in at 12:30 pm. Around 3:30 I cranked up temp to 225. Let it roll till IT of 125. Took oot of smoker at 5:30, lightly wrapped in foil and set on counter. 45 minutes later the girls had everything else ready to go. IT had rising to 135 during the rest.

The wife and kids said it was the best Prime Rib they've ever had
Even the end cuts where medium rare and juicy. And Gators SPG was amazing on this hunk of cow

the "ONLY" thing wrong with that, Wild Bill, is it's not on my plate being harpooned by my fork  :salut: if I was forced to make a choice the Prime Rib would be numero uno

might as well add a bottle of their new Campfire Steak Seasoning - it Rocks a Steak to total perfection. IMHO
