Bacon wrapped "fatty" spices?

Bacon wrapped "fatty" spices?

What do you guys like to use to spice plain ground pork before wrapping your fatty?
I can't use any heat or at least very little so other than salt and pepper, what's good?
I have a favorite pork butt rub but I don't really want to use that same flavor profile on this monster...

Throw some SB Pecan on the fatty, works great on my pork ribs.
How bout some more beans Mr.Taggert? I'd say you've had enough!

Unfortunately when you take spicy out of it I am lost.

Cumin is the most underrated spice ever. I use it all the thyme.
