UPDATE.... so i moved to Imgur for picture hosting. And for this site the pic size has to be less than 1200x1200, so had to figure out how to shrink them... ANYWAY.. here we go

A while back i was asking about what to do with a hind qtr of a wild hog.. WELLLL... i did what comes naturally. Season it up, get the WSM goign to about 250 and TOSS it on as my fingers are crossed for the next 10 hours. I seasoned it up with a combo of honey hog and some other something or other,and smoked it like i would any other pork. Pecan and Apple wood with a full load of KBB.
After 11 hours total time (2 hours rest), i have to say i LOVED it. The hog soaked in ice water for about 4 days (drained and re-ice every day) to try to clean off some of that WILD taste. It picked up the smoke nicely (probably could have went heavier on the wood actually) and the seasoning was pretty good. The wife didnt really like it as she has never adopted the taste for anything wild, but i REALLY liked it. It was definitely pork and it was definitely wild, but just a hint of metallic wild in the meat. I gave a little of it away to friends, but pretty much ate the entire thing over the next 5 days.. :). just thought id share.
Apparently i didnt get a pic of it after it was pulled, but it pulled very nicely with just my hands. The meat had longer strands then normal pork. Very interesting cook.. I have another qtr in the freezer that will have to go on soon.

Anyhow.. Glad you liked It! I prefer wild pork over store bought any day. Most times it can be fussy, but worth it in the end.

Thanks OUP.. I hadnt been behind a rifle in some time, but i took this one from 70 yards w/ a 300 winn mag because "nothing says overkill like overkill"... I was told there has been some annoyance w/ the pigs running for a while after getting hit with a AR15. Well he dropped about 30 feet from where i hit him, so i guess Problem Solved.

That really looks good. I don't deer hunt anymore because if I am not going to eat it, I'm not going to shoot it and I don't care for venison. That hog,quail,and doves had better watch out tho. Looks very tasty.

Nice pics! A 300 magnum should have no problem dropping anything, including bad habits, at that range!! Considering the last pig I shot was point blank in the dome with a 9 mil and she looked at me like, "Can i help you?!"

Russ... i actually think i woudl put more wood smoke into the meat... i used a fruit wood and probably pecan... but next time i think id mix some fruit w/ post oak and get a stronger smoke flavor into it. I think it would go great w/ the slightly wild flavor AND probably go a little heavier on the salt for the same reason.
Besides that.. i was very happy with it.
